ZUCCHINI BACON

Zucchini bacon is a great additional to your plant-based breakfast menu. You can place it on your breakfast sandwiches, burgers, or in your tacos.

produce
 12 zucchini
water
 ¼ cup spring water
seasonings and oils
 1 tsp liquid smoke
 2 tbsp agave
 ¼ cup date sugar
 ¾ tbsp sea salt
 1 tbsp cajun seasoning
 1 tsp cayenne powder
 2 tbsp grapeseed oil

Whisk together all ingredients except zucchini in a large bowl

Toss zucchini in the marinade and place in the fridge for at least 1 hour.

Add a tablespoon of grapeseed oil to a cast iron skillet.

Add zucchini strips to the skillet turning over each slice until you have the desired consistency (soft or crunchy).

Allow to cool.

Add to lentil burgers or chickpea egg breakfast sandwiches.
